Spinach, Banana & Ginger Smoothie

As a student, I’ve become a bit of a Convenience Queen. Why cook rice when you can buy microwaveable packets? Why make healthy homemade chips when you can buy the oily frozen ones? (Even I don’t know whether I’m being sarcastic.)

As a result of my shameful desire for fast and easy meals and snacks, smoothies are my go-to breakfast, sometimes lunch and ashamedly, yes, sometimes dinner. They’re just so quick but super healthy! Most days I can’t be bothered making an elaborate quinoa salad, okay! Over the past few months I’ve been drinking this smoothie as though there’s an impending banana famine. It’s delicious, and that’s coming from someone who used to hate adding greens to their smoothies. So I thought I’d share the recipe, especially seeing as it’s getting close to summer and a cold smoothie might be all you need in the world right now.

  • Handful of spinach
  • 1-2 frozen bananas
  • Desired amount of ginger
  • Tbsp flaxseed
  • Pinch of cinnamon
  • Almond milk
  • Water
  • Optional: Tbsp peanut butter
  • Optional: A few walnuts/pistachios

  • Add all of the ingredients to a blending cup. If you like your smoothies thicker, use less liquid and vice versa. I use a ratio of about 3:1 almond milk to water – if I use only almond milk it’s a bit too creamy for my liking, but you do you
  • Mix the ingredients in a blender
  • Voila! You now have a fresh, delicious smoothie 🙂
